Good Toddler Eats.
I know we like to joke about it from time to time- our children go through a 3 or 4 dish cycle of foods that they’ll actually eat. For Indy, it’s either chicken or steak with some sort of pasta or rice and black beans accompanying…oh, and Mac & Cheese. He’s only recently started eating fruit & veges again but once in a while he is impossible to feed. When he was a baby, he used to love acorn squash, green beans, peas, pears, peaches…you know all the easy foods. But as he got older and I started giving him the same foods in their non-pureed form, he started getting weird about the different textures. I took someone’s advice long ago to “feed them whatever you’re eating” which is what I usually do, but if he doesn’t want to eat it, I can’t bring myself to send him to bed hungry. So over time, it’s been Indy dictating what I cook for the whole family because it’s just easier.
Every year during “flu season” I feel guilty about enabling these sort of eating habits because I’m convinced that if Indy ate more vegetables and fruits and etc, he’d have fewer colds. So here’s the deal…I need your help. What are some UNBELIEVABLY EASY, fast and delicious meals that your toddler loves to eat? It would also help if they were cost effective. When he was younger, I tried to only buy organic, local food…but my wallet started protesting big time. I know there are books about this, and I could probably find some recipes myself online, but this is more fun. And I like you guys. Please?
